Productivity machine build recommendation?

I’m generally savvy with computing, but as a long-term Mac user, I've never really touched hardware before. My mind is blown be now discovering that a building Hackintosh is pretty doable these days and that there's a kick-ass community supporting it

Time to give it a go. Have some people near me that I can get around for to help out with the build.

Need to first figure out the build.
